Do you want to surprise someone special with one of the most festive breakfasts he or she has ever seen? Serve these vegan pancakes.I made these vegan pancakes to surprise my boyfriend with a nice breakfast on his birthday. They were definitely a fantastic start of our day! And the good news is: you can make them very easy in just five minutes!
Ingredients for 6-8 small pancakes
- 1 cup soy milk or almond milk
- 1 cup whole wheat flour
- 1 tbsp granulated sugar
- 1/2 tsp vanilla extract (optional, you can also use 1 tbsp vanilla sugar instead of granulated sugar)
- 1/8 tsp salt
- 2 tbsp sunflower oil
- Option: 1 tbsp organic baking powder*
Method
As I said, making these yummy pancakes is very simple! Just use a whisk to mix all the ingredients and you can start cooking. Heat some oil in a skillet over medium heat and spoon the mixture in it. Flip when you see bubbles in the middle of the pancakes, or if the edges are looking stiffened.
When the pancakes are ready you can decorate them with whatever looks festive! I used powdered sugar, maple syrup, and berries. Enjoy!
* Note: baking powder causes batters to rise when baked, which means it does a little bit more leavening. In this recipe, you could add 1 table spoon baking powder. I prefer an organic version of it because for some weird reason I get an unpleasant feeling in my mouth if I eat normal baking powder. That is why I am a bit careful with adding this to my recipes. Recognising this weird feeling in your mouth? Even when using the organic version? The pancakes will become beautiful too without baking powder!
