Crunchy Tofu Poke Bowl

Tada! My very first vegan poke bowl! With sesame-crusted tofu and Thai peanut sauce.

I know, the traditional Poke Bowl has cubed raw fish combined with mixed veggies over a bowl of rice. But why not skip the fish? In this vegan poke bowl, I replaced the fish with sesame-crusted tofu, kept the vegetables and used miehoen rice noodles instead of traditional rice. The finishing touch of this poke bowl is a home-made Thai peanut sauce.

Ingredients Poke Bowl

  • Miehoen rice noodles
  • Edamame beans
  • Carrot, rasped
  • Cucumber
  • Coriander
  • Sesame-crusted tofu
  • Thai peanut sauce

Toppings

  • Crusted unsalted peanuts
  • Sliced spring onion

Method

Just put the rice noodles and veggies in a bowl and top it with the tofu, peanuts and spring onion. Serve with the Thai peanut sauce and enjoy!

Ingredients sesame-crusted tofu (1 portion)

  • A half block of tofu (packed in water)
  • garlic clove, smashed
  • 1 tbsp toasted sesame oil
  • 1 tbsp soy sauce
  • tbsp seasoned rice wine vinegar
  • 0,5 tsp crushed red pepper flakes
  • 2 tbsp toasted sesame seeds

Method 

  1. Press as much water out of the tofu as possible. Slice into rectangles.
  2. Add the garlic, toasted sesame oil, soy sauce, vinegar, crushed red pepper flakes and cubed tofu to a large bowl and chill in the refrigerator for 30 minutes to an hour.
  3. Place the toasted sesame seeds in a small bowl. Dredge each piece of tofu in the sesame seeds.
  4. Heat a large nonstick pan over medium low heat. Add the tofu and allow it to brown a bit before flipping sides (the sesame oil should prevent sticking). Make sure the sesame seeds do not burn.

Ingredients Thai peanut sauce (1 portion)

  • tbsp peanut butter
  • 0,5 tbs soy sauce
  • 1/4 tbsp toasted sesame oil
  • 0,5 tbsp seasoned rice vinegar
  • 1/4 tbsp sambal (I prefer sambal Badjak)
  • 1/4 tsp agave syrup
  • 0,5 tbsp water

Method

This is easier than you might think. Just whisk together all the ingredients!
